Yesterday was my kind of day. It was sunny and pretty warm and it was a perfect day to light up the grill. I have such a love hate relationship with spring. Anyone who knows me, knows what a struggle winter is for me. We even had a comparatively easy winter this year and I am still thrilled to have it behind us. I love the sun and I love warmth. However, I have allergies all spring and summer (at least in our area) and it makes spring slightly less joyful. Still if I had to live with cold winter or pretty spring with allergies I would pick spring and summer with allergies any day.Pause! I can’t believe I forgot to start out with the best part of our day yesterday. I had my 16-week check up and we got to hear the heart beat for the second time. It is one of the happiest sounds to hear, at least while pregnant. This next month will be exciting. I should start feeling the baby move in a couple weeks and next month we finally get to do our ultrasound! We can fine-tune the due date… and most importantly know if this little one is a girl or a boy! I know some people can pull off the whole finding out at the end thing, but I am definitely not one of them. That’s our latest update and I am so excited for the changes to come in the next month!Should we finally get to our recipe? I thought so as well:-) I already mentioned it was a grilling day — my favorite. I threw together some chicken and vegetable kebabs with a garlic lime marinade. The best option when grilling is to let your food marinade for as long as possible, but if you can only do it at the end that is totally fine as well. The longer you marinade the stronger that flavor will be (combined with the wonderful smoky flavor that comes from the grill). I used tomatoes, cut into wedges, onions and bell peppers as my vegetables. Mushrooms and Zucchini are also great grilling options. I let the kebabs cook for 3-5 minutes on each side. To get really fun you can always add some fruit in there!
Garlic Lime Chicken Vegetable Kebabs
2 large chicken breasts
1 bell pepper
¼ C lime juice
1 t minced garlic
¼ t pepper
¼ t salt
- Thaw chicken, if needed. Chop vegetables, I like to cut tomatoes into wedges.
- Cut chicken into smaller pieces and marinate meat and vegetables in lime juice, salt, pepper and garlic. The longer you do this step the better.
- Place chicken and vegetables on skewers. Grill for 3-5 minutes on each side.
